In a small saucepan, bring red bell pepper, one cup of water and simple syrup to a boil. Reduce heat to a simmer for about 10 minutes. Remove from heat, strain and refrigerate until cool.
Cocktail:
In a shaker, mix red bell pepper infusion, ice and vodka.
Serving directions:
Moisten the rim of a martini glass with liquid stevia and rim with tajin. Add ice followed by the strained cocktail mix. Garnish with dehydrated bell pepper.
